Before I begin, let me preface this post by saying that I absolutely LOVE cupcakes! They are the perfect portion of sugary sweetness. I occassionally bake them and will definitely eat one when offered.
I'd eat one in a car, I'd eat one in a barn, I'd eat one near a cow on Uncle Bill's farm. Ok, enough of my poor Dr. Seuss-edness.
My problem with cupcakes is that there just isn't enough room to decorate. In my opinion, serious cupcake baking is about creating unique flavors for these little tastes of heaven. People are more likely to eat and enjoy a rich, heavy, yet fulfilling cupcake than a thick slice of cake. You can fill them, load them up with frosting, but aside from sprinkles and a piece of fondant or candy, there isn't much else you can do to make them pretty. Which, is why I enjoy cake decorating.
Honestly, I'm really not all that creative. I need to improve on transfering the picture in my mind onto the actual cake. Also, I need to be more exact and particular when it comes to the decorative touches I apply. But these are unique challenges to have, and I like it. Again, it goes back to my commitment to do my best in my hobby, rather than half-ass it and hope it turns out, which has been my current practice.
Perhaps I've created a challenge for true cupcake bakers and lovers to prove me wrong, but I've yet to see that amazing looking cupcake. And if I have, I completely missed it because I stuffed it straight in my mouth in two bites.

I agree about the size of cupcakes and that's why I'm going to be buying this for Aiden's first birthday. :-) http://www.target.com/gp/detail.html/602-5526060-4451834?ASIN=B0010T3020&AFID=Froogle&LNM=B0010T3020|Wilton_Giant_Cupcake_Cast_Pan&ci_src=14110944&ci_sku=B0010T3020&ref=tgt_adv_XSG10001
maybe after your wilton classes - you'll become so good with butter cream - you can figure out some awesome cupcake techniques...but I agree - its more about the cake - with a cupcake.
