Pumpkin Chocolate Chip Cookies

I.LOVE.STARBUCKS.

(plain & simple)


And I have married a man who loves Starbucks too. We have countless cups & mugs, a Starbucks espresso machine, we've gone through several of their coffee makers, 80 percent of our Christmas tree is adorned with Starbucks ornaments and we've taught our 3-year old how to order her drink...made her way. You'd think we owned stock in the company, dang, right...we do.

I haven't made a Starbucks cake YET. But, aside from a coffee, I've made my next favorite thing I've ever gotten there.
With the Fall season comes their Pumpkin Spice Latte (sweet goodness in a cup), but this time of year also brings their Pumpkin Chocolate Chip cookies. And I've managed to replicate their chocolate-y goodness.

The Pumpkin Cookie recipe I used is from the Joy of Baking website. It's a soft, pillowy and cakey cookie, for which you can add chocolate chips, nuts or smother with cream cheese frosting. I opted to add the chocolate chips and further exalt their goodness by dipping them in chocolate, just like you'd find in their stores.
The sweet, crunchy, chocolate bite on the outside combined with the pumpkin and warm spice flavors inside, make this cookie sinfully delicious. It will garner nothing but compliments.
