I made this cake for my daughter's daycare friend, Riley, who was celebrating her 2nd birthday.
Pretty easy cake to make, but it took me forever. I took my time on this one but was also making a mini tasting cake for a wedding in March. Yep, you read right, I'll be making my 1st wedding cake! CRAZY. I digress.
I made the mistake of buying 10 oz bags of mini marshmallows for my fondant, which yields so much less than what I need to cover one cake. Which meant I was running to the store, where I realized, I typically buy 16 oz bags of marshmallows. A mistake I won't be making ever again.
The lower tier is a 10" chocolate fudge with traditional buttercream. And the top tier is an 8" spice cake w/ swiss meringue buttercream. All covered and decorated w/ marshmallow fondant.
I also made an Elmo topper; both that and the #2 are 50/50 fondant & gumpaste.
